Shantell Semillon 2005
COLOUR Brilliant, pale straw with lime green tinges of medium intensity. AROMA This wine shows distinctive cool-climate Semillon characters, with green apples and lime dominating, followed by hints of gooseberry, hay and honey. PALATE Abundant fresh citrus and lime fruit flavours lead onto a lively middle palate with appealing biscuity richness and good length. The finish is clean and crisp. A refreshing and youthful wine. This unwooded Semillon is a refreshing dry wine, which offers considerable potential for aging and is delightful to drink now. SERVING SUGGESTION Caramelised vine tomato tarte tatin with a sour cream and chive sause. Fettucine with oven roasted cherry tomatoes, spinach, ricotta & pecorino WINEMAKING TECHNIQUES The grapes were picked on 2nd April, 2005 at 12.5 oBaume. The grapes were crushed and pressed. The juice was then cold settled, racked and fermented to dryness in stainless steel tank. The wine was bottled on 15th October, 2005 at 12.5% Alc/Vol and 3.20 pH.
